  • Total Time: 40 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 1 pound fresh strawberries
  • 8 ounces semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • crushed nuts, sprinkles, or shredded coconut (optional)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 to 4 tablespoons buttermilk
  • 1/2 teaspoon salt
  • Royal icing for decoration
  • 2 cups fresh raspberries
  • 3 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Instructions

  • Wash the strawberries and dry them thoroughly with a paper towel.
  • In a microwave-safe bowl, combine chocolate chips and coconut oil.
  • Melt the mixture in 30-second intervals, stirring in between until smooth.
  • Dip each strawberry into the melted chocolate, then place it on a baking sheet lined with parchment paper.
  • Before the chocolate sets, sprinkle your choice of toppings on each strawberry.
  • Refrigerate for 30 minutes or until the chocolate hardens.
  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine flour, baking soda, and baking powder; set aside.
  • In another bowl, cream together butter and sugar until smooth. Beat in the egg and mix in vanilla.
  • Gradually blend the dry ingredients into the creamed mixture. Add buttermilk, mixing until a soft dough forms.
  • Roll out the dough on a floured surface to about 1/4-inch thickness. Use heart-shaped cookie cutters to cut out shapes.
  • Place cookies on baking sheets and bake for 8-10 minutes or until edges are golden. Let cool completely, then decorate with royal icing.
  • In a blender, puree the fresh raspberries until smooth. Strain to remove seeds if preferred.
  • In a small bowl, combine raspberry puree, sugar, and lemon juice. Stir until dissolved.
  • In a separate bowl, whip heavy cream and vanilla until stiff peaks form.
  • Gently fold the raspberry mixture into the whipped cream until evenly blended.
  • Chill the mousse in the refrigerator for at least 1 hour before serving.
