1/2 cup bittersweet chocolate chips
1/4 cup unsalted butter
1/2 cup powdered sugar
2 large eggs
2 large egg yolks
1/4 teaspoon vanilla extract
1/4 cup all-purpose flour
Butter and cocoa powder for greasing ramekins
1 cup heavy cream
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 tablespoon gelatin (or 1 gelatin sheet)
Fresh raspberries for garnish
Instructions
Preheat your oven to 425°F (220°C) and grease two ramekins with butter, then dust with cocoa powder.
In a microwave-safe bowl, combine chocolate chips and butter. Microwave in 30-second intervals, stirring until smooth.
Add powdered sugar, whisking until combined. Then incorporate eggs, egg yolks, and vanilla extract.
Fold in the flour until just combined.
Divide the batter into the prepared ramekins and bake for 12-14 minutes until the edges are firm, but the center is soft.
Let them sit for a minute before inverting onto a plate. Serve immediately, ideally with a scoop of vanilla ice cream!
In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it bloom for about 5 minutes.
In a saucepan, combine heavy cream, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves, but do not let it boil.
Remove from heat and stir in the bloomed gelatin until dissolved completely.
Pour the mixture into two serving glasses and refrigerate for at least 4 hours or until set.
Once set, garnish with fresh raspberries and a drizzle of raspberry sauce if desired.
