200 grams of dark chocolate (70% cocoa or higher)
30 grams of cocoa powder
100 grams of granulated sugar
50 grams of brown sugar
115 grams of unsalted butter
2 eggs
65 grams of all-purpose flour
1 teaspoon of vanilla extract
240 milliliters of heavy cream
50 grams of powdered sugar
100 grams of milk chocolate
fresh berries for garnish
Instructions
Molten Chocolate Lava Cake: Preheat your oven to 425°F (220°C) and grease four ramekins with butter and cocoa powder. Melt 1 cup of dark chocolate and ½ cup of butter in a double boiler, stirring until smooth. In a separate bowl, whisk together 2 eggs, 2 egg yolks, and ¼ cup of sugar until light and fluffy. Pour the melted chocolate into the egg mixture and add 1 tsp of vanilla extract. Gently fold in ½ cup of flour until just combined. Divide the batter among the ramekins and bake for 12-14 minutes. Let them cool for 1 minute, then invert onto plates and serve immediately.
Chocolate Mousse: In a saucepan, heat 1 cup of heavy cream until just simmering. Add 8 oz of dark chocolate and stir until melted and smooth. Let it cool slightly. In another bowl, whip 2 egg whites until soft peaks form. Gradually add ¼ cup of sugar and continue to beat until stiff peaks form. Gently fold the cooled chocolate mixture into the egg whites. In a separate bowl, whip 1 cup of heavy cream until soft peaks form, then gently fold into the chocolate mixture. Spoon into dessert cups and refrigerate for at least 2 hours before serving.
Chocolate Truffles: Melt 8 oz of dark chocolate with ½ cup of heavy cream in a saucepan over low heat, stirring until smooth. Stir in 1 tsp of vanilla extract and chill the mixture in the refrigerator until firm, about 2 hours. Once chilled, scoop out small amounts and roll into balls. Coat the truffles in cocoa powder, chopped nuts, or melted chocolate as desired. Place on a baking sheet and chill again until set.
