Total Time:2 hours 30 minutes
Yield:12 rolls 1x
Ingredients
Scale
3 1/4 cups (390g) all-purpose flour, plus more for dusting
2 1/4 teaspoons (1 packet) active dry yeast
1/4 cup (50g) granulated sugar
1 teaspoon (6g) salt
1 cup (240ml) warm milk (105-115°F/40-46°C)
1/4 cup (60ml) warm water (105-115°F/40-46°C)
1/4 cup (57g) unsalted butter, melted
1 large egg, lightly beaten
1 large egg beaten with 1 tablespoon of milk (for brushing)
Instructions
Activate the Yeast: In a large bowl, combine the warm milk, warm water, and sugar. Sprinkle the yeast over the mixture and let it stand for 5-10 minutes, or until foamy.
Combine Wet and Dry Ingredients: Add the melted butter and beaten egg to the yeast mixture. Whisk to combine. In a separate bowl, whisk together the flour and salt.
Form the Dough: Gradually add the dry ingredients to the wet ingredients, mixing with a wooden spoon or spatula until a shaggy dough forms.
Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes, or until the dough is smooth and elastic. If using a stand mixer, knead with the dough hook attachment for 6-8 minutes on medium speed. The dough should be slightly tacky but not sticky.
First Rise: Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shape the Rolls: Gently punch down the dough to release the air. Turn it out onto a lightly floured surface and divide it into 12 equal pieces. Roll each piece into a smooth ball.
Second Rise: Place the rolls in a greased 9×13 inch baking dish, leaving a little space between each roll. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 30-45 minutes, or until puffy.
Bake: Preheat oven to 350°F (175°C). Brush the tops of the rolls with the egg wash. Bake for 20-25 minutes, or until golden brown.
Cool and Serve: Let the rolls cool in the baking dish for a few minutes before transferring them to a wire rack to cool completely. Serve warm and enjoy!
