4 large bell peppers (any color)
1 cup quinoa, rinsed
2 cups vegetable broth (or water)
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can diced tomatoes, undrained
1 cup frozen corn
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
Salt and pepper to taste
1/2 cup shredded cheddar cheese (optional, for topping)
Fresh cilantro, chopped (for garnish)
Instructions
In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.
Preheat your oven to 375°F (190°C). Cut the bell peppers in half lengthwise and remove the seeds and membranes. If desired, you can parboil the peppers for 5 minutes to soften them slightly. This step is optional.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the cooked quinoa, black beans, diced tomatoes (with their juice), and frozen corn. Add the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine. Cook for 5-7 minutes, stirring occasionally, to allow the flavors to meld together.
Place the bell pepper halves in a baking dish. Spoon the quinoa and black bean filling evenly into each bell pepper half. If using, sprinkle shredded cheddar cheese over the top of each pepper. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly (if using).
Remove the Stuffed Bell Peppers with Quinoa and Black Beans from the oven and let them cool slightly. Garnish with fresh cilantro before serving. Serve warm and enjoy!
