  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Optional: Avocado slices for serving

  • Prepare the Chickpeas: In a large bowl, combine the rinsed and drained chickpeas, sliced red onion, diced red bell pepper, minced jalapeno pepper, and chopped cilantro.
