1/2 cup rolled oats (not instant)
1 cup milk (dairy or non-dairy) or water
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
Pinch of ginger
1 tablespoon maple syrup (or honey, agave, or your preferred sweetener)
1 tablespoon almond butter
1/2 cup mixed berries (fresh or frozen)
Chia seeds (optional)
Flax seeds (optional)
Chopped nuts (optional)
Coconut flakes (optional)
Instructions
In a small saucepan, combine the rolled oats and milk (or water).
Stir in the cinnamon, nutmeg, and ginger.
Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 5-7 minutes, or until the oats are cooked to your desired consistency. Stir occasionally to prevent sticking.
Stir in the maple syrup (or your preferred sweetener).
Remove the saucepan from the heat and stir in the almond butter until it’s fully incorporated.
Pour the oatmeal into a bowl and top with mixed berries.
