1/2 cup cooked quinoa or brown rice
1/4 avocado, sliced
1/2 cup chopped cucumber
1/4 cup shredded carrots
1/4 cup chopped papaya or mango
1 tablespoon chia seeds or hemp seeds
1/2 cup grilled chicken or chickpeas (optional)
2 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
1 teaspoon raw honey or maple syrup
1/2 teaspoon Dijon mustard
Pinch of sea salt and black pepper
Instructions
Prepare the Base: In a large bowl, combine the mixed greens, cooked quinoa or brown rice, fermented vegetables, avocado, cucumber, and carrots.
