  • Preheat the Oven: Preheat your oven to 400°F (200°C). This high temperature is crucial for getting that nice, caramelized exterior on your roasted cauliflower.
  • Prepare the Cauliflower: Wash the cauliflower thoroughly and cut it into even-sized florets. Try to keep them roughly the same size so they cook evenly.
  • Season the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper. Make sure each floret is well coated for maximum flavor.
  • Roast the Cauliflower: Spread the seasoned cauliflower florets in a single layer on a baking sheet. Avoid overcrowding the pan, as this can steam the cauliflower instead of roasting it. If necessary, use two baking sheets. Roast for 20-25 minutes, or until the cauliflower is tender and lightly browned, flipping halfway through.
  • Prepare the Tahini Dressing: While the cauliflower is roasting, prepare the tahini dressing. In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, parsley, salt, and pepper until smooth.
