1 cup quinoa, rinsed
2 cups water
1 (15-ounce) can black beans, rinsed and drained
1 cup frozen corn, thawed
2 ripe avocados, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped (optional)
1/4 cup fresh cilantro, chopped
1/4 cup lime juice (about 2–3 limes)
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon cumin
1/4 teaspoon chili powder (optional)
Salt and pepper to taste
Instructions
Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed and the quinoa is fluffy. Remove from heat and let it cool slightly.
Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, minced garlic, cumin, chili powder (if using), salt, and pepper. Taste and adjust seasonings as needed.
Assemble the Salad: In a large bowl, combine the cooked quinoa, black beans, corn, diced avocado, red bell pepper, red onion (if using), and cilantro.
Dress the Salad: Pour the lime dressing over the salad and gently toss to combine. Be careful not to mash the avocado.
Chill and Serve: For the best flavor, cover the salad and chill it in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold and enjoy!
