1 lb fresh strawberries
8 oz chocolate chips (dark or milk chocolate)
1 cup heavy cream
2 tablespoons sugar
1 teaspoon vanilla extract
1 cup granola
1 cup mixed berries (blueberries, raspberries, blackberries)
Mint leaves for garnish

Rinse the strawberries under cool water and thoroughly dry them with paper towels.
In a microwave-safe bowl, melt the chocolate chips in 30-second increments, stirring in between until smooth.
Dip each strawberry into the melted chocolate, ensuring it's fully coated, and allow the excess chocolate to drip off.
Place the dipped strawberries on a parchment-lined baking sheet. If desired, sprinkle with crushed nuts or sprinkles before the chocolate sets.
Chill in the refrigerator for about 30 minutes until the chocolate hardens.
In a mixing bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form.
Layer half of the whipped cream in serving cups, then add a layer of mixed berries followed by a sprinkle of granola.
Repeat the layers until the cups are filled, topping with a final layer of whipped cream and fresh berries.
Garnish with mint leaves and chill in the fridge until ready to serve.
