  • Preheat your oven to 350°F (175°C). Grease and flour mini cake pans or line them with parchment paper for easy removal.
  • In a medium bowl, combine the all-purpose flour, baking powder, and salt. Stir well and set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.
  • Add the eggs, one at a time, mixing until fully incorporated. Then, add the vanilla extract and mix until smooth.
  • Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Mix until just combined. If desired, add a few drops of red food coloring.
  • Pour the batter into the prepared mini cake pans, filling each cup about two-thirds full. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely in the pans for a few minutes before transferring them to wire racks.
