Bake irresistibly delicious Linzer Cookies This ultimate baking guide offers expert tips a failproof tech making perfect Linzer cookies every time
Total Time:1 hour 30 minutes
Yield:Approximately 24 cookies 1x
Ingredients
Scale
200 grams of all-purpose flour
100 grams of almond flour
100 grams of granulated sugar
150 grams of unsalted butter, softened
1 large egg
1 teaspoon of vanilla extract
1/4 teaspoon of salt
1/2 teaspoon of ground cinnamon
1/2 cup of raspberry jam (or your favorite flavor)
1/4 cup of powdered sugar, for dusting
Instructions
Cream the Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 3-5 minutes with an electric mixer.
Add the Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, salt, and ground cinnamon.
Gradually Add Dry Ingredients to Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can result in tough cookies.
Chill the Dough: Divide the dough in half, flatten each half into a disc, wrap them in plastic wrap, and chill in the refrigerator for at least 1 hour. This allows the gluten to relax and prevents the cookies from spreading too much during baking.
Roll Out the Dough: Preheat oven to 350°F (175°C). On a lightly floured surface, roll out one disc of dough to about 1/8 inch thickness.
Cut Out the Cookies: Use Linzer cookie cutters (or other decorative shapes) to cut out the cookies. Use a smaller cutter to create a cutout in the center of half of the cookies.
Bake the Cookies: Place the cookies on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden brown.
Cool the Cookies: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assemble the Cookies: Once the cookies are completely cool, spread a thin layer of jam on the flat side of the solid cookies. Dust the cutout cookies with powdered sugar. Place a powdered-sugar-dusted cookie on top of each jam-covered cookie, creating a sandwich.
