  • 2 cloves garlic, minced

  • 1 cup brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon turmeric
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro, a dollop of yogurt, a squeeze of lemon juice
  • Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and chopped carrots, and cook for another 3 minutes, stirring occasionally.
  • Add the cubed sweet potatoes and rinsed lentils to the pot. Stir to combine with the vegetables.
  • Pour in the vegetable broth and add the cumin, coriander, smoked paprika, and turmeric. Stir well to ensure all ingredients are combined.
  • Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender. Stir occasionally to prevent sticking.
  • Season the stew with salt and pepper to taste. Adjust the spices as needed. Serve hot, garnished with fresh cilantro, a dollop of yogurt, or a squeeze of lemon juice, if desired.
