Ingredients
Scale
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 sweet potatoes, peeled and cubed
1 cup brown or green lentils, rinsed
4 cups vegetable broth
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon smoked paprika
1/4 teaspoon turmeric
Salt and pepper to taste
Optional toppings: fresh cilantro, a dollop of yogurt, a squeeze of lemon juice
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and chopped carrots, and cook for another 3 minutes, stirring occasionally.
Add the cubed sweet potatoes and rinsed lentils to the pot. Stir to combine with the vegetables.
Pour in the vegetable broth and add the cumin, coriander, smoked paprika, and turmeric. Stir well to ensure all ingredients are combined.
Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender. Stir occasionally to prevent sticking.
Season the stew with salt and pepper to taste. Adjust the spices as needed. Serve hot, garnished with fresh cilantro, a dollop of yogurt, or a squeeze of lemon juice, if desired.
