  • Total Time: 135 minutes
  • Yield: 12-16 servings 1x

Ingredients

Scale
  • 810 pounds Bone-in or boneless ham (fully cooked, shank or spiral-cut)
  • ½ cup Honey
  • ¼ cup Dijon mustard
  • ¼ cup Brown sugar, packed
  • 2 tablespoons Apple cider vinegar
  • ½ teaspoon Ground cloves
  • 2 tablespoons Pineapple juice (optional)
  • ½ cup Water
  • Instructions

  • Preheat your oven to 325°F (163°C). Remove the ham from its packaging and place it in a large roasting pan. If using a spiral-cut ham, ensure the cut side is facing down.
  • Pour ½ cup of water into the bottom of the roasting pan. This will help prevent the ham from drying out during baking.
  • Cover the roasting pan tightly with aluminum foil. Bake for approximately 10-12 minutes per pound, or until the internal temperature reaches 140°F (60°C). Use a meat thermometer to accurately gauge the temperature, inserting it into the thickest part of the ham without touching the bone.
  • While the ham is baking, prepare the glaze. In a small saucepan, combine honey, Dijon mustard, brown sugar, apple cider vinegar, ground cloves, and optional pineapple juice.
  • Cook the glaze over medium heat, stirring constantly, until the sugar is dissolved and the glaze is smooth and slightly thickened. This should take about 5-7 minutes.
  • Remove the ham from the oven and carefully remove the foil. Increase the oven temperature to 400°F (200°C).
  • Generously brush the ham with about half of the honey glaze. Make sure to get the glaze into all the nooks and crannies, especially if using a spiral-cut ham.
  • Return the ham to the oven, uncovered, and bake for another 15-20 minutes, or until the glaze is bubbly and caramelized.
  • Remove the ham from the oven and brush with the remaining glaze. Bake for another 5-10 minutes, watching carefully to prevent burning. The ham should be a deep golden brown color.
  • Remove the ham from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful ham.
  • Carve the ham and serve immediately.
