Total Time:135 minutes
Yield:12-16 servings 1x
Ingredients
Scale
8–10 pounds Bone-in or boneless ham (fully cooked, shank or spiral-cut)
½ cup Honey
¼ cup Dijon mustard
¼ cup Brown sugar, packed
2 tablespoons Apple cider vinegar
½ teaspoon Ground cloves
2 tablespoons Pineapple juice (optional)
½ cup Water
Instructions
Preheat your oven to 325°F (163°C). Remove the ham from its packaging and place it in a large roasting pan. If using a spiral-cut ham, ensure the cut side is facing down.
Pour ½ cup of water into the bottom of the roasting pan. This will help prevent the ham from drying out during baking.
Cover the roasting pan tightly with aluminum foil. Bake for approximately 10-12 minutes per pound, or until the internal temperature reaches 140°F (60°C). Use a meat thermometer to accurately gauge the temperature, inserting it into the thickest part of the ham without touching the bone.
While the ham is baking, prepare the glaze. In a small saucepan, combine honey, Dijon mustard, brown sugar, apple cider vinegar, ground cloves, and optional pineapple juice.
Cook the glaze over medium heat, stirring constantly, until the sugar is dissolved and the glaze is smooth and slightly thickened. This should take about 5-7 minutes.
Remove the ham from the oven and carefully remove the foil. Increase the oven temperature to 400°F (200°C).
Generously brush the ham with about half of the honey glaze. Make sure to get the glaze into all the nooks and crannies, especially if using a spiral-cut ham.
Return the ham to the oven, uncovered, and bake for another 15-20 minutes, or until the glaze is bubbly and caramelized.
Remove the ham from the oven and brush with the remaining glaze. Bake for another 5-10 minutes, watching carefully to prevent burning. The ham should be a deep golden brown color.
Remove the ham from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful ham.
Carve the ham and serve immediately.
