1 cup brown or green lentils (rinsed)
2 medium carrots, diced
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon ginger, grated
1/2 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon coriander
6 cups vegetable broth (low sodium)
2 tablespoons olive oil
1 tablespoon lemon juice (freshly squeezed)
Salt and pepper to taste
Fresh cilantro or parsley for garnish (optional)
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
Stir in the turmeric, cumin, and coriander. Cook for about 30 seconds, allowing the spices to bloom and release their aromas.
Add the diced carrots and rinsed lentils to the pot. Stir to coat everything with the spiced oil.
Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils and carrots are tender.
Remove the pot from the heat. Stir in the lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
Ladle the soup into bowls and garnish with fresh cilantro or parsley, if desired. Serve warm and savor every spoonful.
