  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 6 cups vegetable broth (low sodium)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
  • Instructions

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  • Stir in the turmeric, cumin, and coriander. Cook for about 30 seconds, allowing the spices to bloom and release their aromas.
  • Add the diced carrots and rinsed lentils to the pot. Stir to coat everything with the spiced oil.
  • Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils and carrots are tender.
  • Remove the pot from the heat. Stir in the lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
  • Ladle the soup into bowls and garnish with fresh cilantro or parsley, if desired. Serve warm and savor every spoonful.
