4 Mahi-Mahi fillets (6–8 ounces each)
1/4 cup olive oil
1/4 cup orange juice, freshly squeezed
2 tablespoons lemon juice, freshly squeezed
1 tablespoon lime juice, freshly squeezed
2 tablespoons honey or maple syrup
1 tablespoon grated fresh ginger
1 tablespoon ground turmeric
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh cilantro or parsley, chopped (for garnish)
Instructions
Prepare the Glaze: In a medium bowl, whisk together olive oil, orange juice, lemon juice, lime juice, honey (or maple syrup), grated ginger, turmeric, minced garlic, and red pepper flakes (if using). Season with salt and pepper to taste.
Marinate the Fish: Place the mahi-mahi fillets in a shallow dish and pour the citrus turmeric glaze over them. Make sure each fillet is well coated. Cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.
Preheat the Grill: Preheat your grill to medium-high heat. Clean the grill grates and lightly oil them to prevent the fish from sticking.
Grill the Mahi-Mahi: Remove the mahi-mahi fillets from the marinade and place them on the preheated grill. Grill for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork. Baste the fillets with the remaining marinade while grilling.
Serve and Garnish: Once the Grilled Mahi-Mahi is cooked, remove it from the grill and let it rest for a few minutes before serving. Garnish with fresh cilantro or parsley and serve immediately.
