½ cup shredded coconut, unsweetened
½ cup almond butter
¼ cup honey or maple syrup
2 tablespoons chia seeds
1 tablespoon ground turmeric
1 teaspoon ground ginger
½ teaspoon cinnamon
¼ teaspoon black pepper
¼ cup chopped nuts (optional)
¼ cup dried cranberries or raisins (optional)
Instructions
Combine dry ingredients: In a large bowl, mix together the rolled oats, shredded coconut, chia seeds, turmeric, ginger, cinnamon, black pepper, chopped nuts (if using), and dried cranberries or raisins (if using).
Add wet ingredients: Add the almond butter and honey (or maple syrup) to the bowl.
Mix well: Stir everything together until well combined. You may need to use your hands to really get everything incorporated. The mixture should be slightly sticky.
Chill: Cover the bowl and refrigerate for at least 30 minutes. This will help the mixture firm up and make it easier to roll into balls.
Roll into balls: Once chilled, roll the mixture into bite-sized balls, about 1 inch in diameter.
Optional: Roll the balls in extra shredded coconut for a pretty finish.
