Total Time:105 minutes
Yield:4-6 servings 1x
Ingredients
Scale
1 Whole Chicken (3–4 lbs)
6–8 cloves Garlic
2 tablespoons each, chopped Fresh Herbs (Rosemary, thyme, and parsley)
3 tablespoons Olive Oil
1 Lemon
Salt and Pepper (To taste)
1 lb, chopped Optional Vegetables (Carrots, potatoes, onions, and celery)
Instructions
Preheat your oven to 425°F (220°C). Remove the chicken from the packaging and pat it dry with paper towels. This is crucial for achieving crispy skin.
In a small bowl, combine the minced garlic, chopped fresh herbs, olive oil, salt, and pepper. Mix well to create a flavorful paste.
Loosen the skin of the chicken breast by gently sliding your fingers between the skin and the meat. Rub about half of the herb mixture under the skin, directly onto the breast meat. This will infuse the meat with flavor and keep it moist. Rub the remaining herb mixture all over the outside of the chicken.
Cut the lemon in half. Squeeze the juice from one half over the chicken. Place both halves of the lemon inside the chicken cavity. If using vegetables, toss them with a little olive oil, salt, and pepper, and arrange them around the chicken in the roasting pan.
Place the chicken in a roasting pan fitted with a rack. The rack allows for even air circulation, ensuring crispy skin all around. Roast for 15 minutes at 425°F (220°C).
Reduce the oven temperature to 375°F (190°C) and continue roasting for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part of the thigh. Use a meat thermometer to ensure accurate doneness.
For extra moisture and flavor, baste the chicken with pan juices every 20-30 minutes during the roasting process.
Once the chicken is cooked through, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful chicken. Tent the chicken loosely with foil during resting to keep it warm.
Carve the chicken and serve it with the roasted vegetables and pan juices. Enjoy!
