1 teaspoon of baking soda

1 teaspoon of mixed spice

100 grams of unsalted butter, softened
150 grams of brown sugar
120 milliliters of molasses
1 large egg
120 milliliters of milk
1 tablespoon of golden syrup
Instructions
Preheat your oven to 325°F (160°C). Grease and flour a square or rectangular baking pan (approximately 8×8 inches or 9×13 inches).
In a large bowl, whisk together the flour, baking soda, ground ginger, mixed spice, and salt.
In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. You can use an electric mixer or do this by hand.
Beat in the molasses, golden syrup, and egg until well combined.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix.
Pour the batter into the prepared pan and spread evenly. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
Let the gingerbread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Cut into squares and serve.
