Yield:12 servings 1x
Ingredients
Scale
1 cup warm milk (105-115°F)
2 ¼ teaspoons active dry yeast (1 packet)
¼ cup granulated sugar
1 teaspoon salt
¼ cup unsalted butter, melted
1 large egg
4 cups all-purpose flour, plus more for dusting
½ cup unsalted butter, softened
¾ cup packed brown sugar
2 tablespoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
4 ounces cream cheese, softened
¼ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2–4 tablespoons milk, as needed
Instructions
In a large bowl, whisk together the warm milk, yeast, and sugar. Let it stand for 5-10 minutes until foamy, which indicates the yeast is active. Add the melted butter, salt, and egg to the yeast mixture. Stir to combine. Gradually add the flour, 1 cup at a time, mixing until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a lightly greased bowl, turning to coat. Cover with a clean towel or plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
While the dough is rising, prepare the filling. In a medium bowl, combine the softened butter, brown sugar, cinnamon, nutmeg, and cloves. Mix well until a paste forms.
Once the dough has doubled, punch it down to release the air. Turn the dough out onto a lightly floured surface and roll it into a large rectangle, about 12×18 inches. Spread the cinnamon sugar filling evenly over the dough, leaving a small border along one of the long edges. Starting from the opposite long edge, tightly roll the dough into a log. Pinch the seam to seal it. Using a sharp knife or dental floss, cut the log into 12 equal slices. Place the cinnamon rolls in a greased 9×13 inch baking dish. Cover with a clean towel or plastic wrap and let rise for another 30-45 minutes.
Preheat oven to 350°F (175°C). Bake the cinnamon rolls for 25-30 minutes, or until golden brown. Let the cinnamon rolls cool slightly before frosting.
While the cinnamon rolls are baking, prepare the frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, beating until well combined. Stir in the vanilla extract. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
Once the cinnamon rolls have cooled slightly, generously spread the cream cheese frosting over the tops. Serve warm and enjoy!
