  • Prepare the Ganache: Place the chopped chocolate in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer (small bubbles form around the edges). Do not boil.
  • Melt the Chocolate: Pour the hot cream over the chopped chocolate. Let it sit for 1 minute to soften the chocolate.
  • Combine and Emulsify: Gently whisk the cream and chocolate together, starting from the center and working outwards, until the chocolate is completely melted and the mixture is smooth and glossy.
  • Add Butter and Flavorings: Stir in the softened butter until it is fully incorporated. Add any optional flavorings, such as liqueur or vanilla extract, and stir to combine.
  • Chill the Ganache: Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2 hours, or preferably overnight, until the ganache is firm enough to scoop.
  • Shape the Truffles: Once the ganache is firm, use a small cookie scoop or spoon to portion out the truffles. Roll each portion between your palms to form a smooth ball. If the ganache is too soft, return it to the refrigerator for a short time.
