  • Start by placing the chopped dark chocolate in a medium-sized mixing bowl. In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Once simmering, pour the hot cream over the chocolate and let it sit for about 2 minutes. After 2 minutes, whisk the chocolate and cream together until smooth and glossy.
  • Next, stir in the unsalted butter and vanilla extract to the ganache mixture. If you'd like to add additional flavors like sea salt, espresso powder, or liqueur, now is the perfect time to do so. Mix until well incorporated. Cover the bowl with plastic wrap and refrigerate the ganache for approximately 2 hours or until it’s firm enough to scoop.
  • Once the ganache is firm, use a melon baller or a small spoon to scoop out portions of the mixture. Roll each portion into a smooth ball using your hands. If you find the mixture is too sticky, you can lightly dust your hands with cocoa powder.
  • After forming the truffles, it's time to coat them. Roll each truffle ball in your choice of cocoa powder, chopped nuts, or melted chocolate. Ensure they are evenly coated for a perfect finish. Place the coated truffles on a baking sheet lined with parchment paper.
