  • Begin by chopping the dark chocolate into small pieces and placing it in a heatproof bowl. Use a double boiler method, or microwave the chocolate in short bursts. Stir every 20 seconds until melted and smooth, then set aside to cool slightly.
  • In a clean mixing bowl, add the egg whites and a pinch of salt. Whip the egg whites on medium speed until soft peaks form. Gradually add the granulated sugar while continuing to whip until stiff peaks form.
  • In another bowl, pour the heavy cream and vanilla extract. Whip the cream until soft peaks form.
  • Once the melted chocolate has cooled slightly, add the egg yolks one at a time to the chocolate, mixing well after each addition. Then, gently fold in one-third of the whipped cream until just combined.
  • Slowly fold in the whipped egg whites using a spatula to maintain texture. Finally, fold in the remaining whipped cream until combined and no streaks remain.
  • Transfer the mousse to individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours or until set.
