8 ounces of dark chocolate (preferably 70% cocoa)
4 large eggs, separated
1/4 cup granulated sugar
1 cup heavy cream
1 teaspoon vanilla extract

Instructions
Begin by chopping the dark chocolate into small pieces and placing it in a heatproof bowl. Use a double boiler method, or microwave the chocolate in short bursts. Stir every 20 seconds until melted and smooth, then set aside to cool slightly.
In a clean mixing bowl, add the egg whites and a pinch of salt. Whip the egg whites on medium speed until soft peaks form. Gradually add the granulated sugar while continuing to whip until stiff peaks form.
In another bowl, pour the heavy cream and vanilla extract. Whip the cream until soft peaks form.
Once the melted chocolate has cooled slightly, add the egg yolks one at a time to the chocolate, mixing well after each addition. Then, gently fold in one-third of the whipped cream until just combined.
Slowly fold in the whipped egg whites using a spatula to maintain texture. Finally, fold in the remaining whipped cream until combined and no streaks remain.
Transfer the mousse to individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours or until set.
