  • 1-inch piece of ginger, peeled and grated
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon black pepper
  • 1 cup cooked chicken or turkey (optional)
  • 1 cup cooked rice or quinoa (optional)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Salt and pepper to taste
  • Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  • Add the minced garlic and grated ginger to the pot. Cook for another minute until fragrant, stirring constantly to avoid burning.
  • Pour in the bone broth, and then add the turmeric powder and black pepper. Stir well to combine.
  • Bring the soup to a gentle simmer. Reduce the heat to low, cover the pot, and let it simmer for at least 30 minutes, or up to 1-2 hours for a richer flavor. The longer it simmers, the more the flavors will meld together.
  • If using, add the cooked chicken or turkey and cooked rice or quinoa to the pot during the last 15 minutes of simmering. This will heat them through and infuse them with the soup’s flavor.
  • Taste the soup and season with salt and pepper to your liking. Garnish with fresh parsley or cilantro before serving.
