3 cups (360g) all-purpose flour, plus more for dusting
1 cup (200g) granulated sugar
1/2 cup (100g) brown sugar, packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon, plus more for swirling
1/4 teaspoon ground nutmeg (optional)
2 large eggs
1/2 cup (120ml) vegetable oil, or melted coconut oil
1/2 cup (120ml) applesauce, unsweetened
1 teaspoon vanilla extract
1/4 cup (60ml) milk or buttermilk
2 cups (about 2 medium) apples, peeled, cored, and diced
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan. Alternatively, line the pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).
In a separate bowl, whisk together the eggs, vegetable oil, applesauce, and vanilla extract. Gradually add the milk or buttermilk until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
Gently fold in the diced apples until evenly distributed throughout the batter.
In a small bowl, mix together 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon.
Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Pour the remaining batter over the cinnamon-sugar layer, and sprinkle the remaining cinnamon-sugar mixture on top. Use a knife or skewer to gently swirl the cinnamon sugar into the batter.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top of the bread is browning too quickly, tent it loosely with aluminum foil.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
